I love a refreshing cocktail (like my recent Mommy Cocktail). But sometimes the mocktail is where it’s at. Like these crisp and icy ginger peach slushies. This non-alcoholic slushie recipe is bright, fresh, and easy – perfect for clinking glasses with your kiddos, sipping by the pool, or downing at your next barbecue. With just 6 ingredients (that’s including the ice) and 6 minutes, you have one of the best non-alcoholic slushies of the summer!
I wasn’t really sure what to call this – slush, slushie, icee, non-dairy smoothie – the list goes on. I went with slushie because it sounds the most fun. So, I apologize if that’s not the most accurate.
This is a great non-alcoholic slushie option for hot summer days, which we’re about to have plenty of. While I love cooling off with tasty frozen goodness like my Peanut Butter S’mores Icebox Cake, sometimes I need to be slightly more health conscious. And this Ginger Peach Slushie does the trick – with all the flavors of summer.
And before anyone else notices, let me admit that those are nectarines and not peaches. I briefly considered trying to figure out how to photoshop some fuzz on them, but I let it go. I think we get the point – which is this drink has some delicious fruit flavor. And the ginger and lime just brighten that up even more. If you want, go ahead and make it with frozen nectarines…why not?
- 1 1/2 cup frozen (peeled and sliced) peaches
- 2 cups coconut water
- 1 cup ice
- 1 teaspoon fresh ginger root , grated
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
Put all ingredients into a blender and blend on high until smooth. Taste and adjust honey and ginger to your liking. Best served with a drink umbrella!
